Pork with apples, sundried tomatoes, and green chilies
Tonight was pork tenderloin with basmati rice and fennel.
Pork tenderloin was sliced 2" thick and seasoned with cumin and salt. Seared in olive oil on each side. Added half a chopped apple, small can of Trader Joe's green chilies, and 1/4 cup of minced sundries tomatoes plus a little water. Put a lid on the pan and slid in the oven for 20 minutes at 350.
Fennel was chopped, then cooked in a bit of chicken broth with three slices of lemon. A bit too much bouillon in the broth, so a bit salty, but flavour mix was nice.
